Purchased by their father, Ivo, the winery is currently owned and operated by the three Casini brothers; Danilo, Franco and Giancarlo. The land sits in the heart of Tuscany in the historical town, Gaiole. The Cassini brothers are Chianti; classic, sturdy and getting better every year. They and their wines are indistinguishable.
Tasting Notes:
A dessert wine made from dried grapes, it opens with intense aromas of maple syrup, carob and rushed raw almond. The palate is concentrated and gives ample flavor of dried apricot, chestnut, honey and toasted hazelnut. A fresh acidity helps to balance the sweet flavors.
Pair it With:
The traditional pairing with Vin Santo wines is biscotti, and most sweet pastries work just as deliciously.
Grape Varieties:
67% Malvasia, 33% Trebbiano
Aging:
5 years in small chestnut and oak barrels followed by 10-12 months in glass containers before bottling.
